If you need a quick solution for lunch, a barbecue, or any kind of meal, this quick pita bread baked on a stove is the perfect way to go. It completely bypasses long fermentation windows to deliver hollow, pillowy flatbreads that pop open with a perfect steam pocket for stuffing.

Method

Yeast Ignition & Autolyse Phase
  1. 8:00 AM: In your mixing bowl, combine the 200g of lukewarm water, 3g of dry instant yeast, and 30g of sugar (or honey). Stir cleanly by hand until the yeast and sugars are completely dissolved.
  2. Dump all 310g of bread flour and 40g of whole wheat flour over the liquids, then pour in the 30g of olive oil and 6g of salt.
  3. Mix everything together with a spoon just until no dry flour patches remain and a wet, shaggy mass forms. Cover the bowl and let the dough rest undisturbed for 30 minutes for the autolyse stage. Note: The dough will look very sticky right now, but do not panic; it will come together cleanly later as the flour absorbs the liquids.
Kneading & Primary Bulk Rise
  1. 8:30 AM: Attach your dough hook (or work directly on your counter with floured hands). Knead the dough continuously for 5 to 7 minutes until the matrix becomes notably smooth, soft, and clear of the bowl walls.
  2. Cover the bowl securely and let it ferment for 1 hour to 1 hour and 30 minutes in a warm spot at 76–84°F (24–28°C). Perform one clean stretch-and-fold across the center of the mass halfway through the rise to build structural strength.
  3. 10:00 AM: Verify that the dough has grown at least twice its original size in volume.
Bench Resting & Stovetop Cooking
  1. Sprinkle your clean work surface generously with flour. Tip the expanded dough out and use a bench scraper to divide it cleanly into 6 equal pieces weighing roughly 100g each.
  2. Round each piece firmly against the counter into a tight ball. Cover the balls completely with a damp kitchen towel and let them rest for 15 minutes to relax the tight gluten strands.
  3. Lightly dust a dough ball with flour. Using a rolling pin, roll it out from the center into a neat, flat round measuring roughly 6 to 7 inches in diameter with an even thickness of about 0.25 inch. Repeat for the remaining pieces.
  4. Place your frying pan over medium-high heat and let it get exceptionally hot.
  5. Lay a flat dough round directly into the hot, dry pan. Bake for exactly 1 minute—it will begin ballooning proudly and forming large air pockets. Flip it over carefully and cook for an additional 1 minute on the opposite side until beautiful golden spots appear all over the surface.
  6. Remove the hot pita, stack it immediately on a plate under a clean cloth to trap the steam, and repeat for the rest of the rounds.
