These stunning braided rolls are soft, slightly sweet, and perfect for filling with sweet or savory ingredients. While they require a bit of patience to braid, the result is absolutely worth it! I filled mine with Nutella, and they were a huge hit.
Ingredients
Dough
β’ 400 g all purpose flourΒ
β’ 120 ml warm milk
β’ 40 g greek yogurtΒ
β’ 6 g dry instant yeastΒ
β’ 60 g granulated sugarΒ
β’ 1 egg
β’ 20 g butter
β’ 10 g saltΒ
Filling Suggestions:
β’ Nutella (for a sweet option)
β’ Cream cheese and herbs
β’ Garlic butter
β’ Jam or fruit preserves
Directions
β’ Warm the milk slightly and dissolve the yeast and sugar in it. Let it sit for about 5-10 minutes until it becomes foamy.
β’ In a large bowl, mix the flour and salt.
β’ Add the yogurt, egg, and butter to the flour mixture. Then, pour in the activated yeast mixture.
β’ Knead the dough until it becomes smooth and elastic (about 8-10 minutes by hand or 5 minutes using a stand mixer).
β’ Cover the dough and let it rise in a warm place for 1-2 hours, or until it doubles in size.
β’ Once the dough has risen, divide it into 10 equal portions. Roll each portion into a thin round shape with diameter of 20cm. Sprinkle circles with flour, fold in half.

β’ Use a pizza cutter to make evenly spaced cuts along one side of the dough (as shown in the first image).
β’ Take the cut strips and braid them gently, starting from one end and working your way to the other side.
β’ Fold the braided section over, leaving space for the filling on the uncut part of the dough.

β’ Pipe or spoon your desired filling onto the unbraided portion of the dough.
β’ Carefully fold the braided side over the filling, sealing the edges gently.
β’ Place the rolls on a baking sheet lined with parchment paper. Cover and let them proof for another 1 hour.

β’ Preheat your oven to 180Β°C (350Β°F).
β’ Brush the tops of the rolls with milk. Place rolls inside the oven and lower temperature to 325F.
β’ Bake for 22-25 minutes, or until they are golden brown.
β’ Let them cool slightly before serving.

Place the shaped syrnik on a tray lined with parchment paper. Repeat the process for the remaining dough. You should get about 24 pieces from this recipe.
Can I use whole yogurt instead of Greek?
Yes, you can definitely use whole yogurt instead of Greek yogurt in most recipes. Just keep in mind that Greek yogurt is thicker and tangier than regular whole yogurt, so the consistency and flavor of your dish may be slightly different. Feel free to give it a try and adjust the seasonings as needed to suit your taste preferences. Enjoy cooking!
