Braided Nutella Rolls

These stunning braided Nutella rolls are soft, slightly sweet, and perfect for filling with sweet or savory ingredients. While they require a bit of patience to braid, the result is absolutely worth it! I filled mine with Nutella, and they were a huge hit.

Ingredients

Dough

• 400 g all purpose flour 

• 120 ml warm milk 

• 40 g greek yogurt 

• 6 g dry instant yeast 

• 60 g granulated sugar 

• 1 egg

• 20 g butter 

• 10 g salt 

Filling Suggestions:

• Nutella (for a sweet option)

• Cream cheese and herbs

• Garlic butter

• Jam or fruit preserves

Directions 

• Warm the milk slightly and dissolve the yeast and sugar in it. Let it sit for about 5-10 minutes until it becomes foamy.

• In a large bowl, mix the flour and salt.

• Add the yogurt, egg, and butter to the flour mixture. Then, pour in the activated yeast mixture.

• Knead the dough until it becomes smooth and elastic (about 8-10 minutes by hand or 5 minutes using a stand mixer).

• Cover the dough and let it rise in a warm place for 1-2 hours, or until it doubles in size.

• Once the dough has risen, divide it into 10 equal portions. Roll each portion into a thin round shape with diameter of 20cm. Sprinkle circles with flour, fold in half.

• Use a pizza cutter to make evenly spaced cuts along one side of the dough (as shown in the first image).

• Take the cut strips and braid them gently, starting from one end and working your way to the other side.

• Fold the braided section over, leaving space for the filling on the uncut part of the dough.

• Pipe or spoon your desired filling onto the unbraided portion of the dough.

• Carefully fold the braided side over the filling, sealing the edges gently.

• Place the rolls on a baking sheet lined with parchment paper. Cover and let them proof for another 1 hour.

• Preheat your oven to 180°C (350°F).

• Brush the tops of the rolls with milk. Place rolls inside the oven and lower temperature to 325F.

• Bake for 22-25 minutes, or until they are golden brown.

• Let them cool slightly before serving.

The Dough

  • 2 tbsp Milk (for brushing)

Method

Dough Preparation
  1. Dissolve yeast and sugar in warm milk. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add the yogurt, egg, softened butter, and the yeast mixture.
  3. Knead for 8–10 minutes by hand (or 5 minutes in a stand mixer) until smooth and elastic.
  4. Cover and let rise in a warm place for 1–2 hours until doubled in size.
Shaping & Braiding
  1. Divide dough into 10 equal portions. Roll each into a 20cm circle. Sprinkle lightly with flour and fold in half.
  2. Use a pizza cutter to make evenly spaced cuts along the straight edge of the folded dough.
  3. Braid the cut strips gently across the circle.
  4. Pipe your desired filling (like Nutella) onto the un-cut side and fold the braided section over it, sealing the edges gently.
Final Proof & Bake
  1. Place on a baking sheet lined with parchment paper. Cover and proof for 1 hour.
  2. Preheat oven to 180°C (350°F).
  3. Brush rolls with milk. Place in the oven and immediately lower the temperature to 325°F (165°C).
  4. Bake for 22–25 minutes until golden brown.

Notes

To keep rolls soft, ensure you don’t over-bake them and immediately lower the oven temperature as instructed. Brushing with milk before baking and covering them with a clean towel while cooling helps trap steam for a softer crust.
